High School Career
Plummer went to Pierce Park Elementary, Hillside Junior High, and graduated from Capital High School in 1993 where he played baseball, basketball, and football. Plummer was chosen as an all-state quarterback and punter.
College Career
Plummer attended Arizona State University on a football scholarship. As a junior, he was chosen to the all-conference team, but he never led the Pac-10 in any significant statistical categories.
Plummer threw for 2,222 yards and 17 touchdowns as a junior and more than 2,000 yards and 17 touchdowns as a senior. 1996 was arguably his best year as a senior in school history.

Plummer dated Jennifer Walcott in the past. He and former Broncos cheerleader Kollete Klassen have been married since 2007 and have three children together. Pat Tillman and he became pals while they were teammates for the Cardinals.
Tillman enlisted in the American Army Rangers in the wake of 9/11. After Tillman passed away on April 22, 2004, all NFL players wore a memorial decal on their helmets in his honour, and the Cardinals wore this decal the entire 2004 season.
